When someone with as many accomplishments as Cliff Young buys a medieval estate in the center of the wine country in France, and in 12 years transforms it into a luxurious private hotel, winery and restaurant, you have to assume that his days of crafting top notch restaurants and wine cellars in Denver are over.
Yet here he is, opening CY Steak, a French-influenced steakhouse with more than 520 old and new wine selections, a private collection of reputable cigars, and French cuisine influenced by his years in France and refined by Executive Sous Chef Mike Weist.
“We moved to France to delve into another phase of our lives,” said Young. “I’ve always enjoyed the challenge in attempting new ventures.”
The restaurant, located at 1222 Glenarm Place where Oscar’s restaurant used to be, is a fine eatery that also will feature topless entertainment at night. CY Steak is featuring their Stonestreet Wine Dinner on Nov. 13 at 6:30 p.m. The six-course dinner and wine pairing includes an appetizer of amuse bouche, fresh crabcakes paired with chardonnay, filet mignon topped with black truffle slice paired with cabernet, and desserts based on crčme and chocolate. The gourmet feast is $150 per person, and reservations are required.
“The quality, preparation and service for this meal are top-notch,” said Young. “We feel it’s well worth the money.” Young first gained national prominence with the opening in 1984 of Cliff Young’s, an upscale fine dining restaurant on 17th Street. Earning rave reviews in Bon Appetit Magazine, Gourmet Magazine and the New York Times, the restaurant earned the Distinguished Restaurant of North America Award for excellence in dining. For 18 years Young was a development consultant for Century Advertising, creating wine programs and upscale concepts for a high-end steakhouse, an Italian bistro and a supper club. He founded Cliff Young’s Restaurant Consultants, overseeing projects such as the Assignments Restaurant at the Colorado School of Culinary Arts; the critically acclaimed Avenue Grill; the Denver Botanic Garden Cafˇ; and the Napa Cafˇ, a wine bistro with 600 wine selections all with a 90 or greater rating.
“I still have my consulting firm, and when I started looking at opportunities I couldn’t pass this space up,” said Young. “It’s at the epicenter of what is planned to be the Gateway to Denver. In years to come, I think this will be a very lucrative location.”
But as much as Young and his wife, Sharon, enjoyed France, he says they are thrilled to be back.
“We missed America,” he said. “It’s great to be back in business in Denver.”
